OMG… we could ALL live on this dish at my house ๐ด๐๐ด
Make the Quinoa as described in previous post… let cool in a large serving bowl…
I only stir with a FORK… like rice… never a Spoon!!
Thoroughly wash, then finely chop your Parsley… stalks included!!
REMOVE stalks from your Mint…
Chop the leaves…
Chop the Basil… including the softer parts of the stems!!
Then mix your Herbs together…
And add them to your Quinoa…
Quarter of a bag of sweet, wonderful Baby Tomatoes… whichever are good at the time…
I find theseย HEAVENLY ๐๐
Add to the Salad… along with a good sprinkling of Sea Salt!!
Salt very much enhances the flavor of Tomatoes…
Glug over some nice Olive Oil…
Rinse–not wash–with warm soapy water a Lemon (preferably organic) to get rid of the wax coating…
Then grate the zest of the Lemon into the mix…
A Microplane is FANTASTIC for this job…
Get your hothouse Cucumber…
Speed peel the skin…
Cut in half… then deseed, first with a knife then with a sharp small spoon…
I find my metal measuring spoons perfect for this…
Getting rid of the seeds stops the Salad from becoming too wet!!
Chop… first lengthwise…
Then into a dice…
Chuck it in with the rest of your Oh So YUMMY, fresh, beautiful ingredients!!
Give it ALL a mighty good stir with a large fork or TWO….
Add the juice your Lemon that you grated for zest… start with a half… again you don’t want the mixture to be a soggy mess…
Check the Seasoning…
More Salt… Pepper… Olive Oil…
Done…
A PERFECT after school snack!!
Or accompaniment to ALMOST ANYTHING for lunch or supper!!!
