There’s NO substitute for HOMEMADE MAC N CHEESE…

AND it’s NOT Rocket Science ๐
Get some Pasta on the go… wait until it comes up to a simmer… THEN salt the WATER !
Knob of Butter… and a glug of Olive Oil in a saucepan… MELT…
ADD 2 tablespoons of Flour…
Whisk… the Butter and Flour will congeal… they will cling to one another like LOVERS!!
Cook for a minute or so to get the raw Flour taste out of the unison!!!
Your SUPPOSED to bring your Milk up to scalding point (a fraction BEFORE BOILING)…
But I’m often making this on the fly for my boys… so I never seem to get round to that step!!!
I pour my cold Milk on top of the Butter Flour… GRADUALLY…
Adding a bit… and then whisking… it will form aย Mรฉnageย ร ย troisย ย ๐
With the Butter and Flour!!!

But keep whisking… and adding a bit more Milk… and you’ll start to see a melding of the ingredients!!
They will become creamy and more sauce like!!!
The PASTA… cooked to packet instructions…
DRAIN the Pasta and run some COLD Water on it to wash away some of the starch and stop the cooking process…

Butter an ovenproof dish…
Keep stirring your Sauce…
Once it’s all combined and looking like a White Sauce but thin… cook it off for a few minutes until it thickens!!
You can tell it’s done when it coats the back of a spoon…
And the Sauce holds its edges when you run your finger through it!!
Take the White Sauce–Bรฉchamel SAUCE if you wants its PROPER TITLE–OFF THE HEAT…
Don’t add Cheese to the Sauce when it’s on the heat because it will go OILY…
Stir and whisk it in…
Tasting…ย add more Cheese as you decide the flavor you’re looking for…
Good MELTING CHEESES for this are:
Gruyere…
Cheddar…
Monterey Jack…
Get it melting into your Sauce using the residual heat…
It WILL MELT… don’t worry!!
When you’re happy… check the Seasoning and add some Pepper (White Pepper, if possible)…
Add some Nutmeg, if you’re in the mood…
Then cover your Pasta in this VELVETY RICH CHEESY COATING ๐๐๐
Mix well…
Then if you happen to have some good bread in the bread bin going a little stale…
Whiz it up in the Cuisinart and make some FRESH BREADCRUMBS…
SO EASY!!
NOTHING ELSE REQUIRED…
Top your Mac n Cheese with a final sprinkling of whatever Cheese or mix of Cheeses you wish… say, Monterey Jack and Cheddar…
Sprinkle some Breadcrumbs for your final layer…
This will help soak up any Oil released from the Cheese as it cooks in the Oven and give the top a nice Crust ๐
