Maxi has been asking for BBQ Ribs… AGAIN…
I love making these BBQ Ribs because they require long, low cooking which enables me to get on with the IRONING ππ«
I always cook ribs in a disposable tin foil tray… life’s TOO short to scrub PANS…
I LINE the tray with a large sheet of foil then place some parchment paper in the bottom…
Sometimes I make my own BBQ sauce… other times I open a bottle or TWO… no shame in THAT π
Lovely, lovely baby back ribs π
Which I just Doctor up with some Star Anise…
Some fresh ginger which I simply slice up without bothering to peel…
About half that handful…
Garlic cloves that I crack open with the back of a knife… and again don’t bother to peel…
Marinate the ribs now in teriyaki sauce… I use a good 2/3’s of the bottle…
Preheat the oven to 300…
Fold the extra foil around the ribs…
Then top it off with another sheet covering the whole thing…
I don’t know why I do this… I just DO π³
And leave it on the counter for 30 minutes…
Then into the bottom of the oven it goes…
And I don’t even look at them for 4 hours!!!
After which time I take them out… open them up… and cover them in a sweet and spicy bottled sauce!!
Baste and cover the ribs… turn them over… coating them WELL… then back in the oven for another 45 mins UNCOVERED!!
Meanwhile I start on my CORN….
