Sometimes… I can’t be bothered to go out… so, it’s going to have to be whatever I have in house!!!
A Frittata is my immediate thought…
I have some leftover roasted Fennel from dinner the other night… Eggs, Bacon, Cheese, Tomatoes…
That’ll do nicely!!
Fry off the Bacon… I had an open packet… too much for the Frittata, but I cooked it all anyway…
I’ll find a use another time for whatever I don’t use today!!

Chop up the Fennel and Tomatoes…
Take the Bacon out when nice and crispy… it takes a while, a good 10 minutes, I’d say… maybe more…
Throw in the Fennel… and fry that, too…
In the reserved Bacon Fat Β π±ππ
When soft… drain it on some paper towel… keep some Fat in the pan…
I leave these ingredients for a good couple of hours… not because I have to, but because I’m not ready to make lunch yet!!
When I get the text the boys are on their way home from soccer… I preheat the oven to 350…
And put my Fennel and Tomatoes back in the pan…
When the Tomatoes start to melt a little…
Whisk some Eggs…
How many Eggs really depends on how big your NON-STICK HEAVY duty pan is!!
I use 5… after a quick whisk, pour in the Eggs… season…
But remember the Bacon is salty…
Add the Bacon…
There I was thinking it was all going SWIMMINGLY on a medium heat… when I suddenly remember the CHEESE π±
Or LACK THEREOF π³
Too late to start grating, I have an open packet of the stuff already in the fridge … I grab a handful of THAT and throw it in…

It was FINE… I just try to mix it in as best I can…
Then pop it in the oven to finish for 12 minutes or so…
Make SURE the pan is oven safe!!
Look how beautifully it rises…
There will be some residual cooking, so take it out when the centre is JUST COOKED… not too wobbly, BUT SET!!
