Seriously, through passions of my own, I have created MONSTERS ๐ฑ
So when a day rolls around and I have to use leftovers… I have to deploy SERIOUS techniques to disguise them!!

Now usually I WOULDN’T serve something THE DAY AFTER I just gave them the REAL DEAL, but NECESSITY PREVAILS…
I am OUT ON THE TOWN tonight with some girlfriends…
And THIS TRADITIONAL English comfort food is not only brilliant to make in the morning in preparation for the night out…
(BELIVE me, I take some GETTING READY these days ๐ณย I need my afternoon FREE!!!)
But even MY boys can chuck this in the oven and serve it themselves!!
Right, so first I rummage around ย the fridge and I find ALL I NEED ๐๐๐ผ๐
For my COTTAGE PIE!!!
(FYI…ย COTTAGE PIE is made using BEEF…ย SHEPHERDS PIE is made using LAMB (the shepherds look after sheep, right ๐๐)
Leftover Ground Beef and veggies from last night’s beef Wellington…
Plus, I had another pack of Beef in the fridge!!
Potatoes…
Heinz Baked Beans (I’ll come back to those)…
Fresh Parsley…
Leftover Cheese…
And a lonely Tomato!!
So. get that Beef all mixed together
GENTLY…
Add a drop of Water… maybe a 1/2 ย a cup…
Throw it in the oven at 400 for 30 minutes…
Get on with the Spuds…
Cut them into fairly small chunks… more or less same size so they cook evenly…
Remember Potatoes go in COLD Water, THEN come up to the boil…
When they do boil, add a couple of pinches of Salt… starchy Spuds love Salt!!
Then turn them down to a light simmer and cook until they fall off a knife and are nice and tender but NOT waterlogged!!
Deposit in a colander…
And put a tea towel on top to create and absorb the steam!!
Now in the same hot pan they just came out of, melt a good knob of Butter…
And some heavy whipping Cream…
Season…
And stir till warm… then decant to a jug…
Now for a BRILLIANT bit of kitchen equipment!!!
The old fashioned Mouli…
This one is All-Clad from Williams-Sonoma… and cost a fortune so I got my MUM to buy it for me ๐
BUT it was $150 well spent, MUM ๐
I use it CONSTANTLY!!
Put the now dry(er) potatoes in your Mouli or just MASH as you would normally…
The gadget below is on top of the warm pan the Cream and Butter just came out of…
Why make MORE washing up ๐
Pour over your warm Butter Cream mixture… gradually!!
And turn the handle…
Genius ๐
Out comes hassle-free, LUMP-FREE MASH ๐๐
Scrape everything down…
Add more Cream and Butter mixture if needed… mix with a fork and add most of the Cheese and check seasoning…
Your potatoes are READY… put a lid on the pan to keep warm!!
