IF you have any Mushroom Risotto left over, here is what you can do…
I just make it into Arancini…easy to do…
The light OLIVE OIL is heating up to 350…
Get your leftover Risotto… I probably had about 2 cups…
Mix in some freshly grated Parmesan Cheese… about half a cup…
Dice up some Mozzarella balls…
And form the Arancini…
By encompassing each piece of Mozzarella with the mushroomed Rice ๐
Roll it up…
Make a ball…
I make them about 1 1/2 ” big…
Drench them in Breadcrumbs…
Just some I have in house… sometimes I make my own… sometimes it might be Panko… I don’t worry too much…
Toss them into the HOT OIL…
DON’T OVERCROWD THE PAN… or the heat will drop…
Roll around until brown and golden… about 4 minutes…
To help the balls keep their shape, you can refrigerate them before frying… but I didn’t… I was in a hurry … SO SHOOT ME ๐
But they were FINE… I DARE one of my boys to question their roundness ๐ก !!!
If you WANT perfect balls… ย set them by sticking them in the fridge for a couple of hours…
They might need a little more bread crumbling after… especially if you HAPPEN to FORGET ALL ABOUT THEM and you find them the NEXT DAY…
Just SAYIN’ย ๐ณ
Drain on kitchen paper towels…
Sprinkle with a little Salt…
Dress your Salad
Plate up and ENJOY!!!
Especially the little molten Mozzarella centre…
Love a leftover…
THATS UNRECOGNIZABLE!!!
