I love Panini’s!!!
Here’s one I make regularly for Saturday lunch… to go with a Soup I may have made… or a can I have opened π
Take your Ciabatta rolls and lop their tops off…
Just take the dome off…
Then cut them in half…
This prevents the sandwich from being too “BREADY “… and also allows the heat of the Panni Press to get through to the filling!!
Drizzle some good Olive Oil over the cut sides…
Place maybe 3 slices of Fontina Cheese on one side…
Followed by a sliced Tomato… and some Salt…
And Pepper…
It was at THIS point… I realized I was dressing the WRONG side!!Β π±
So, with a quick shuffle around, I now had my filling on the BOTTOM of the roll… and the top waiting to seal the Prosciutto…
Some baby Arugula (Roquette)…
A pinch more Salt…
And a squeeze of Balsamic Glaze… I’m a sucker for flavored Oils and Vinegars π but regular works fine!!
Looking GOOOD…
Add a little more Oil to the TOPS of the lopped off tops…. to prevent sticking and help browning…
Lid down… check after 5 minutes…
Cut on the diagonal…
Serve with a Soup…
This was the Pea and Mint Soup I made yesterday π
