They should have been rescued after 30minutes… RIGHT!!
Ok, so, here they are…
They will be HOT… what wouldn’t be after being submerged in boiling water for half an hour!!
WHATEVER YOU DO… DON’T THROW AWAY THAT “CHICKEN-Y” POACHING WATER!!
Leave the legs to cool for a while…
Ok, so, back to the Chicken…
Make like a VULTURE… and strip the bones of their FLESH…
😳 oooooooooowwwww
Then, throw THESE BONES in the freezer to be utilized at a later date…
Now, heat the wok…
Nice and HOT HOT HOT 🔥
And snip some Bacon into its depths…
I couldn’t take a photo WHILST snipping with kitchen scissors AND holding the BACON…
I thought about asking the pool guy to help…
But decided discretion was the better part of valor 😎
WHATEVER the HELL THAT MEANS 😝
Get your Bacon NICE and CRISP…
It will end up frothing like this…
Then retrieve with slotted spoon!!
Keep in a bowl… not too far away… so you can have a nibble every NOW and THEN 😋
Start AGAIN with the wok… drain the Bacon Fat off and heat a healthier Oil!!
You definitely DON’T want EXTRA VIRGIN OLIVE OIL HERE!!
NO… don’t waste the good stuff… you want a HIGH HEAT OIL…
Olive Oil
Canola Oil
Peanut Oil …
Heat that till it’s sizzling…
Then add the VEGGIES…
Carrots cut into batons…
Once al dente remove to a bowl…
Then, add Onions and Red Bell Peppers…
Again, remove when almost cooked…
Add a little more Oil… and FRY UP YESTERDAY’S RICE!!!
The Rice you want for a stir fry like this has to be a day old… BELIEVE IT OR NOT… nice and DRY!!
Give it a good stir… let it toast up…
And on another burner… whip up the Sauce…
Oyster Sauce and Honey and Soy Sauce…
My ratio is 2 tablespoons Oyster Sauce… and 2 tablespoons Honey… and 1 teaspoon of Soy Sauce…
Increase amounts as needed!!
THEN ON TOP OF THE HOT RICE… now chuck the fresh veggies you just cooked PLUS the CHICKEN you took off the bone… AND some frozen veggies…
Sweetcorn…
Peas…
Edamame…
WHATEVER floats your boat!!
Give it a good mix… and pour your boiled up Sauce over it all!!
Last, but NOT LEAST… finish with the Bacon you started with!!
You can do this with Brown Rice too…
And add Sweetcorn and Peas to it…
There are NO RULES!!
Mushrooms work well!!
As does Broccoli…
Just makes sure everything’s cooked more or less separately before you throw it all in together at the end!!
