These Oatmeal Cookies are SOOOOOO GOOD!!
And SOOOOOO EASY to make!!
Preheat oven to 375… I ALWAYS COOK EVERYTHING ON CONVEX!!
And call me stupid 😝 no, PLEASE DONT… I don’t adjust the temp…
If a recipe says bake at 375, I do that on convex and don’t take into account the 25 degree variant!!
I JUST NEVER HAVE!!
And everything seems to turn out just FINE… watch me eat my words the next time I make a soufflé 😱
In a large mixing bowl…
Add 2 cups of extra THICK Rolled Oats…
Add 2 cups all purpose (plain) Flour…
1 cup extra fine Sugar (confectioner’s sugar)…
1 1/2 cups sweetened Coconut…
Mix it all in the bowl together… and give it a good stir…
8 oz 😱 GOOD UNSALTED BUTTER
Now THIS little bottle of pure nostalgic heaven is called Golden Syrup… I had it A LOT on EVERYTHING growing up!!!
But it’s great in baking!!
Little tip here: Syrups… Honey… anything STICKY is hard to measure because you lose some when it gets left in the measurer…
So, spray the inside of your tablespoon or cup with a cooking SPRAY…
Then pour in the sticky ingredient…
And you’ll find…
An almost clean measurer at the end…
MARVELOUS!!
SO, WE HAVE 8 oz of Butter and 4 tablespoons of Golden Syrup melting in a fairly large saucepan over moderate heat…
I can’t tell you how many times I’ve made these… and used too small a pan… only to have it bubble over when I add the next ingredient…
Baking Soda…
Don’t just pour it in straight away… FIRST, we need to activate it!!!
So, take 1 teaspoon baking soda… and add 2 tablespoons of HOT water in a separate cup…
Mix it… dissolve the Baking Soda in the hot Water…
THEN add it to your bubbling cauldron!!
And WATCH IT RISE… doubling or trebling in volume… give it a stir…
And while it’s still full of air… mix it into your dry ingredients…
Stir with a fork…
Get a couple of nice heavy duty Cookie sheets lined with parchment paper…
And start to make the Cookies…
Space them out… they WILL spread…
In the oven…
For 13 minutes…
They should be starting to turn golden…and have grown somewhat…
I have a small amount of Chocolate left from some Macaroons I made 3 WEEKS ago 😝
I’m telling you I find a use EVENTUALLY for EVERYTHING 😎
I melt it in the microwave… and just drizzle it over my Cookies resting on the parchment paper…
Once the Cookies are set… maybe for 10 minutes… transfer them to a wire rack so the bottoms cans dry and not stay soggy!!
THE FIRST THING MY HUSBAND did when he walked in from work was grab one of these!!
And with 2 BOYS… They WONT LAST LONG 😋
