I call this EASY MEATLOAF because I have a few meatloaf recipes…
And MOST require some pre sweating (sautéing) of the carrots and onions and celery before adding the ground beef…
THIS RECIPE doesn’t!!
I start with a half loaf of good, day-old bread… and trim it of its crust…
Cut the bouncy white flesh into about 5 slices…
Pour a cup of milk over the slices…
Let it soak up and then just mince it with your hands…
Next add a cup of freshly grated Parmesan cheese…
Then add that to a bowl with 2 lbs of fresh ground chuck roast…
I buy it in one whole piece and kindly ask the butcher to grind it for me… A CONVERSATION STARTER????
Add some seasoning… salt… AND LOTS OF PEPPER…
BEEF LOVES PEPPER!!
Mince some parsley…
Throw that in…
4 eggs…
Whisk well with a fork…
Pour that in…
Mix everything while being quite gentle… ground beef goes tough when overhandled…
Do it with your hands… and form into a nice meatloaf shape…
I use a disposable foil tray lined with parchment paper…
This amount of beef will make 2 meatloaves… I am making one for a friend, as well!!
Cover in bacon…
Bake on 350 for 1 hour 15 minutes….
