I have to say Molly converted me to the joys of salting Chickens (and other meats) before roasting and letting them air dry in the fridge!! This method breaks down the fibers in the meat, and a very noticeable tenderness is the result… it also gives a fabulous crisp skin and a depth of seasoning that can’t be achieved any other way!!
Roasting is probably my preferred method of cooking… it retains the nutrients… provides caramelization and delicious crusts… It’s easy in that you don’t have to stand over it as it cooks… and always looks impressive!!
There are tons of EXCELLENT, well thought out, balanced recipes… tips… and techniques in this book…
As I’ve said, I’ve learnt a tremendous amount… not least because I find her easy to follow–the format is simple and clear–and her recipes always turn out beautifully!!
