As I’ve mentioned before… I don’t like scrubbing pans!!
I’m a big advocate of lining cooking sheets with foil or parchment…
Not just to prevent sticking, but so I don’t have as much cleaning up…
I’m TRYING to train my boys… BUT they are about as much use as a Chocolate TEA POT ๐
I use good all natural Bacon… no growth hormones or nitrates… ย less water content!!
I line my baking tray… and slice some lovely Tomatoes…
Add a drop of Olive Oil over the Tomatoes…
Pinch of Salt…
I use a wire cookie rack when I can find it ๐
That’s the problem with my boys putting things away… they seem to like to HIDE my stuffย ๐ก
In it goes into a preheated 400 oven for 15 to 17 minutes…
I have some nice Brioche Bread… so I stick it in the toaster…
No need to turn the Bacon over…
BUT if you know your oven cooks unevenly–LIKE MINE… ย just turn the tray around half way through, if you remember!!
Bacon crisps up when out of the oven… so, give it chance to set–as it were…
While you drain the Fat in the bottom of the tray for another use on another day!!
Place the Tomatoes on the toasted Brioche… then lay your Bacon on top…
Lid on job… DONE!!!
We LOVE Avocados in our family…
One thing I love to do with them is use them as a Butter alternative… especially if they are getting very ripe…
Like here in a leftover Chicken sandwich I made…
LOVE THIS TYPE OF THING…
Healthy 12 grain bread… ripe Avocado spread on top and bottom…
A layer of leftover roasted Chicken… and a sweet Tomato in between!!!
Salt… Pepper…
DELICIOUS!!!
Did you know Avocado can be used in some BAKED Goods as a Butter alternative… as can PRUNES!!!
