Maxi–top dog now in his final year of Elementary School…
Maxi LOOOVES Chocolate… as you can see here from a recent night out at Ruth Chris… he ordered a Triple Chocolate SOMETHING and was in seventh heaven!!
SO, for the bake sale, he asked for really Chocolatey Brownies!!
Not being from “these parts” (and the English not being BIG ON BROWNIES), I needed help finding a recipe…
OMG did I find just what I was looking for on a blog called…

I used organic ingredients in mine…
And I was SOOO happy with the way they turned out… I ate 5 π©
BUT ENJOYED EVERY MORSEL π
And, of course, they WERE ORGANIC so they had to be good for me… RIGHT π
The bake sale called for individually wrapped Brownies…
And I have a pan I’ve never used that seemed it would be PERFECT for my task…
It turns out to be BRILLIANT!!
The Cookieandkate recipe calls for a large pan… Butter and parchment paper…
I think I’ll try just buttering the individual hollows and hope for the best!

I use some softened Butter I have on hand…
The recipe starts withΒ 1 pack + 2 tablespoons of good unsalted European Butter… diced…
What we want to do here is heat the Butter in a heavy saucepan whisking all the time…
My boys “PUT AWAY” π‘ my whisk… and I’ll be damned if I can find it… so, I make do with a tiny little substitute!!
I stir and try to whisk as best I can…
Eventually… after about 10 minutes, the colour begins to change…
There are definite reddish brown particles in the butter…
This is a GOOD SIGN… we are achieving our goal…
BROWNED BUTTER… Yum!!
After a little more stirring, the colour is a lovely golden brown…
Perfect… nutty and delicious… this gives an extra depth of flavor to the Brownie!!
I take it off the heat…
And “melt”Β 1 and a quarter cups of Sugar into it using the residual heat…
I beat the sugar into the browned Butter… until I get bored π
Then into that goes the first batch of Chocolate…
3/4 cup unsweetened Cocoa Powder…
I don’t even bother to sieve it π
Using a wooden spoon, I stir it in…
Then add a small pinch of Seasalt and a 1/2 teaspoon of Expresso Coffee powder…
Which I put in my Pestle and Mortar…
To fine grind…
