Try to cut your Zucchini (or “Courgette”) into a shape similar to the Penne Pasta you are using…
Just makes for a more aesthetically pleasing, finished dish…
Hey… I didn’t make this stuff up… it’s what the POSH people DO 😝
Use both green and yellow Squash, if you can!!
Cut slightly diagonal rounds then slice lengthwise…
Separate 4 Eggs…
Set a large pan of Water on to boil… then add some Salt…
Unsalted Water boils FASTER than SALTED WATER 😳
WHO KNEW!!!
When you pour the Salt in the Water… BEWARE… the already BOILING WATER will well up fiercely!!
Then it will calm down as the Pasta takes the heat!!
You should cook Pasta in plenty of Water because of this!!
While the Pasta is cooking, add 2 handfuls of freshly grated Parmesan Cheese to your 4 Egg Yokes…
Add 1/2 cup of Cream…
Mix with a fork…
Snip 6 slices of GOOD, well cared-for piggy Bacon into a LARGE frying pan!!
Cook until crisp… add a bit of Olive Oil if needed…
Once nice and toasty… add your Zucchini…
Stir… and season with a good few grindings of black Pepper…
DONT BE SHY!!
The pasta will be just about ready by now… retrieve at least a cup of Pasta Water and strain the rest of the Penne!!
Into your veggies… add some fresh Thyme…
Mix everything… and cook until it’s all browning slightly and softening…
What’s important NEXT–and I’m NOT KIDDING!!–is NOT to COOK THE EGGS for this Carbonara Sauce!!
SO, the hot Pasta Water is THE ONLY thing that’s going to heat the Egg and Cheese and Cream mixture…
And that will happen OFF ANY HEAT!!
Don’t be tempted to heat this mixture any other way… the Eggs WILL SCRAMBLE…
BELIEVE ME, I KNOW 😱
Add the al dente Pasta to your frying pan… and COAT it with the lovely Bacon and Zucchini juices…
Stir WELL…
Set aside to a warm serving dish…
QUICKLY add the sauce….
Mix AGAIN…
SERVE WITH EXTRA PARMESAN!!!
