We have an English Breakfast at least once a weekend… sports permitting…
I usually make the boys a couple of pain au chocolat first thing… then serve this as brunch around 11.30…
DONT ASK ME WHY π
I start with a tray and cover it in foil… so I don’t have any washing up!!
Or LESS washing up!!
Then I drop some yummy vine-ripened tomatoes in the middle…
Slice up some nice portobello shrooms… and chuck them in…
Drizzle some nice olive oil over it all…
Place a wire rack or trivet on top…
Lay out slices of bacon nicely on top of the wire rack so that the delicious bacon juices drop on the tomatoes and mushrooms…
And no flavor is wasted π
Put the tray in the oven on 400 for 20 minutes…
While that’s getting going… dice up some cold butter… and crack as many eggs as you think your family can eat into…
For my boys and Thierry I use…

Decant your choice of baked beans into a small saucepan… this is the kind my Mum bought… SO, it’s the kind I BUY!!
And get your toast ready…
Check the bacon…
Give everything a swish around in those juices now… Β no need to turn the bacon if it’s on a trivet like this!!
The hot oven air can circulate well to cook both sides at the same time!!
Place back in the oven for another 7 or 8 minutes… or so…
On medium heat, start to cook the eggs in a NON-STICK pan… nothing WORSE than having to clean egg pans π¬
The butter will begin to melt… and stir… the eggs will break and begin to cook…
Keep stirring… and season…
Salt and pepper…
This is the tricky bit… the eggs DON’T TAKE LONG…
BUT you have to get the bacon out… AND heat up the beans…AND put the toast in the toaster… AND butter when done…
SO, to stop the eggs over cooking… add a little cream… just a couple of tablespoons… this will drop the heat… enhance the flavor… and help to achieve a creamy texture!!
Take the eggs off the heat while you butter the toast…
Take the bacon off the trivet so you can get to the YUMMY tomatoes and shrooms…
Start to plate up and finish the eggs…
We like quite a wet consistency… but cooked!!
Garnish the eggs with a little chopped chives…
BRUNCH IS SERVED π΄ππ΄
