Here is where your whole Tikka Masala comes together…
You can start here on this post with a store bought Curry Paste like the two I suggest…
Patak’s Tikka Masala Curry Cooking Sauce or a three pack of Sharwood’s Indian Cooking Sauce…
which includes two Tikka Masalas and one Butter Chicken which is tasty too!!
And you can check out the previous post if you want to see what goes into my HOMEMADE one…
So now we are ready to go with our ingredients…
So… EASY to make once you have your Paste already made…
Finely slice 2 Onions…
And finely DICE 1 inch of Ginger…
Heat up a knob of Butter and a couple of tablespoons of Olive Oil in a saucepan on the stove…
Add your Onions… a couple of fresh diced Chilies (de-seeded)… and your Ginger… cook until nice and soft…
Prep your Chicken…trim and cut it lengthwise…
I use 4 breasts…
Take out the cartilage from down the spine… then cut into bite size strips or cubes…
Add to the pan with the Onions…
Add half a cup of the Masala Curry Paste… and a large tin of diced, canned Tomatoes…
Mix it all up… and give it a good stir…
Add a can of Coconut Milk as well… if you like it more creamy!!
Season…
Let it come up to a boil… then turn it down to s simmer… and cook for 15 minutes with a lid on, slightly ajar!!
Take off the lid… and cook for another 5 minutes… stir it when you remember 😊
Dress with some flaked Almonds… and some Coriander Leaves… IF you have some on hand…
Serve over Rice!!
..
I made BROWN Rice this particular night!!!
How VERY VIRTUOUS and NUTRITIOUS 😝👍
I like to bag up any remaining Sauce–but without any Chicken in it–for another night..
When I don’t have time to make the whole thing from scratch…
